Wednesdays Unplugged – Crockpot Appetizer Meatballs with sauerkraut and cranberries

NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

2026 02 04 Singing Resistance

These last few weeks have been a blur. I just talked to a friend who was part of the singing resistance in the photo above. Singing Resistance: Minneapolis Community Comes Together in Song At least some of the 3000 federal agents (700?) are being moved out of Minnesota. Maybe I will join the singing resistance at a later date… for now I am busy with husband John as he heals with his new knee and weakened heart and cousin Don as he continues to struggle with severe kidney disease in the hospital.

RECIPE OF THE WEEK

I haven’t had time for cooking this week, but this recipe for crock pot meat balls is always a winner… great option for a Super Bowl spread!

Saurkraut Meatballs

CRANBERRY SAUERKRAUT CROCKPOT APPETIZER MEATBALLS

  • 14-ounce can whole-berry cranberry sauce
  • 14-ounce can sauerkraut, drained, rinsed and patted dry
  • 12-ounce bottle chili sauce
  • 3/4 cup packed light brown sugar
  • 32-ounce package (66 meatballs) fully cooked, frozen homestyle meatballs

In a 4-quart slow cooker, combine the cranberry sauce, sauerkraut, chili sauce and brown sugar. Stir in meatballs. Cover and cook on low for 4-5 hours or until heated through.

Here is another version I have made… with homemade meatballs. Our son commented on how ‘fresh’ they tasted!

ZESTY MEATBALLS with SAUERKRAUT and CRANBERRIES

  • 2 pounds ground chuck (80-85% lean)
  • 2 cups crushed saltine crackers
  • 1 envelope Lipton’s onion soup mix
  • 3 eggs, beaten

Mix above ingredients together, form into meatballs and put in a 9 x 13 pan to bake.

SAUCE

  • 12 ounce bottle chili sauce
  • 12 ounces water (use empty cili sauce bottle to measure)
  • 1 cup sauerkraut
  • 1 can whole berry cranberry sauce
  • 1 cup brown sugar

Simmer above mixture approximately 5 minutes. Pour over meatballs and bake uncovered for 2 hours at 350 degrees F.
