NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!

This week is the start of this year’s State Fair. We often go with our son’s family on opening day but we stayed home this year. Our son sent the photo above of a cool bag he found at the fair to prove he was there. I had a new listing on the river with an open house… but couldn’t resist a photo of the house above just a few doors away… sadly last sold in 1992 so likely not for sale soon but my MCM sensibilities required me to take a photo anyway!

RECIPE OF THE WEEK

With the State Fair starting this week I couldn’t resist a ‘fair food’ Wednesday. Lunds & Byerlys posted a recipe for State Fair Pickle Pizza and I couldn’t resist… it was even better than I expected! We didn’t use all the ham, and used more cheese. I heated the pizza stone, but couldn’t get the pizza to slice easily off the baking sheet so cooked it on the baking sheet on the pizza stone.

Pickle Pizza

STATE FAIR PICKLE PIZZA

For the garlic sauce

  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 3 garlic cloves, minced
  • 2 teaspoons freshly squeezed lime juice

For the pizza

  • 12 ounce pizza dough (in the deli case)
  • 1 cup shredded mozzarella
  • 8 kosher dill pickle sandwich slices, cut into 1″ pieces
  • 1/2 pound ham steak, diced
  • 1/4 cup shredded cheddar cheese

Heat oven to 500 degrees F, and place a pizza stone on the middle rack.

Mix garlic sauce in a small bowl, set aside.

Press the pizza dough into a 6-inch circle on a lightly floured surface. Lift it off the surface and let it hang over your fists. Move your hands toward the edges of the dough, rotating and stretching it into a 10-inch circle. Transfer dough to a pizza peel or baking sheet.

Spread the garlic sauce evenly over the pizza dough. Top the sauce with an even layer of mozzarella cheese, followed by the pickles and ham. Sprinkle the cheddar cheese over the top. Bake for 15 minutes or until the cheese is bubbling and the edges of the pizza are golden brown.

Remove from the oven and transfer to a cutting board. Allow to rest for 5 minutes, then slice, serve and enjoy!
