Wednesdays Unplugged – Uncle Ray’s Meatloaf

NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

Last week was the Pops! off the Page fundraiser concert at Roseville High School… a super fun concert including our grandkids in orchestra and band!

RECIPE OF THE WEEK

This week’s recipe is from John’s Uncle Ray… from a Hensrud Family Cookbook dating back to a family reunion in 1984. My husband’s parents both had 11 children in their families so there are some we have seen very little. One of those was his Uncle Raymond, who lived in Maryland… but we have his zesty meatloaf recipe that is like a meat and cheese rollup!

UNCLE RAY’S MEATLOAF

  • 1 1/2 pounds ground beef
  • 1/3 cup chopped onion
  • 1/4 cup milk
  • 1/4 cup ketchup
  • 1 teaspoon salt
  • 1 cup shredded cheddar cheese
  • 1 cup coasely crushed wheat crackers
  • 1 egg
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon black pepper

In a large bowl combine beef, 1/2 cup cracker crumbs, onion, milk, egg, ketchup, sauce, salt and pepper. Mix well. Flatten into a rectangle between two pieces of parchment paper, sized so that the short side fits the length of your pan.

Combine the remaining crumbs and cheese, and layer on top of the meat. Roll meat beginning on short side and place in pan.

May top with mixture of 1/2 cup ketchup and 1/4 cup brown sugar, then 1-2 slices thick cut bacon.

Bake at 350 degrees F for 1 1/4 hours.
