Wednesdays Unplugged – Potatoes in Foil

NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

We rented a big cabin near Baraboo, Wisconsin for a week where our family hung out, played games, did puzzles, ate each other’s cooking, and did some sight seeing including the Dells Boat Tours, Dr. Evermor’s Sculpture Park and New Life Lavender & Cherry Farm. It was good. Sadly for the rest of us, our oldest grandson was there only one night… after he and his sister got matching tattoos to celebrate graduating from high school and college, he headed off to college and football training. We discovered Brian Andreas at a little gift shop in The Dells 28 years ago, so it only seems fitting that this week’s quote should be from him.

RECIPE OF THE WEEK

This recipe is great for the grill, the campfire, or even the oven. It got ‘best ever’ reviews with just potatoes, butter, salt, pepper and onion powder! Sour cream lovers even passed on the sour cream, the potatoes were so good without it!

POTATOES IN FOIL

  • Yukon Gold potatoes – 1 potato per person
  • Butter – 1 tablespoon per potato
  • Salt, pepper and onion and/or garlic powder to taste
  • Optional mushrooms, thinly sliced onions, cheese for packets
  • Optional sour cream and bacon bits for topping

Tear off 12-18 inch pieces of heavy duty aluminum foil, one for each potato. Spray with cooking spray if desired. Wash and slice potatoes in food processor… also mushrooms and onions if desired.

Place potatoes and any desired toppings on each foil piece. Top with one tablespoon butter, and salt, pepper and onion and/or garlic powder to taste. Fold each packet closed.

Grill over medium heat about 30 minutes or until soft.

OR cook over the campfire 29-30 minutes avoiding direct flames.

OR bake in the oven at 375 degrees F for 40 minutes or until soft.

Top with sour cream, bacon bits and shredded cheese if desired.
