Wednesdays Unplugged – Sally’s Favorite Rice Krispie Treats

NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

2026 07 15 Air Quality

Wildfires in Canada and northern Minnesota have resulted in the worst air quality in Minnesota history, closing the Boundary Waters Canoe Area and creating hazardous conditions for the Twin Cities and much of the state. Our daughter called after leaving family night on Wednesday to warn me to be careful because even she could feel her lungs itching from all the smoke.

RECIPE OF THE WEEK

It has been hot and sticky, in the 90s, all week and that makes me think simple comfort food… like no-bake rice krispie bars! I find them often dry, but this recipe from sallysbakingaddiction.com with extra butter and marshmallows was far from dry. Our family kept saying how much better they were than pre-packaged ones.

Rice Krispie Bars

SALLY’S FAVORITE RICE KRISPIE TREATS

  • 3/4 cup unsalted butter
  • 2 bags mini marshmallows (10 oz each)
  • 1/2 teaspoon pure vanilla extract
  • Pinch salt
  • 9 cups crispy rice cereal

Line a 9 x 13 inch pan with parchment paper, spray lightly with nonstick spray.

Melt the butter over medium heat in a very large pot. Once melted, add the marshmallows and stir until they are completely melted.

Remove from heat, then immediately stir in the vanilla extract and salt. Finally, stir in the cereal, making sure each piece of cereal is coated with the marshmallow mixture.

Transfer mixture to the prepared pan and lightly press down until it is secure in the pan.

Allow to set for at least 1 hour and up to a day. Use edges of parchment paper to lift out as a whole (if you can wait that long). Cut and serve.
