NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
When we were in college one of my roommates talked with reverence about The Schoolhouse where her father grew up attending school and lighting the fire in the stove every morning. Her parents made it their retirement home. That roommate married my husband John’s cousin… and it is now their summer retirement home, nestled in the beautiful Root River Valley. We spent a day with them this week, before they headed to Palm Springs for the winter. It’s always a fun time when we get together!
RECIPE OF THE WEEK
I found this recipe when I was Googling for a simple way to prepare boneless skinless chicken breasts. It was amazing how something so simple could be so delicious! Many thanks to recipetineats.com.
HONEY GARLIC CHICKEN BREASTS
- 1 – 1 1/4 pound chicken breasts
- Salt and pepper
- 1/4 cup flour
- 3 1/2 tablespoons unsalted butter
- 2 cloves garlic
- 1 1/2 tablespoons apple cider vinegar
- 1 tablespoon soy sauce
- 1/3 cup honey
Cut the breasts in half horizontally. Sprinkle each side with salt and pepper.
Place flour in a shallow dish. Coat chicken in flour and shake off excess.
Melt most of the butter in a large skillet over high heat – hold back about 1 teaspoon for later.
Place chicken in skillet and cook for 2-3 minutes until golden. Turn and cook the other side for 1 minute.
Turn heat down slightly to medium high.
Make a bit of room in the pan and add garlic and top with remaining dab of butter. Stir garlic briefly once butter melts.
Add vinegar, soy sauce and honey. Stir/shake pan to combine. Bring sauce to simmer, then simmer for 1 minute or until slightly thickened.
Turn chicken to coat in sauce. If the sauce gets too thick, add a touch of water and stir.
Remove from stove immediately. Place chicken on plates and drizzle over remaining sauce.
