Wednesdays Unplugged – Improvised Breakfast Strata

NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

Last week our church presented a beautiful evening of music and poetry under stunning projections of the night sky. It was a privilege to sing with the mass choir  for this exquisite concert with a variety of musicians and musical experiences in darkness under the stars as people lay on the floor with their pillows and sleeping bags… a reminder of the vastness of our universe.

RECIPE OF THE WEEK

I came down for breakfast one morning and found remains of a wonderful baguette and ciabatta bread on the counter. More than a day old, I couldn’t bear throwing them so improvised a breakfast egg bake with ingredients I had on hand. I am not sure I remember the exact proportions, but this is a reminder to not be afraid to create your own dishes. I simply threw together what sounded good to me that morning.

IMPROVISED EGG BAKE

  • Leftover baguette, cut into cubes
  • 6-8 eggs, whisked
  • 1 1/2 – 2 cups milk
  • 1-2 cups shredded cheese
  • Fresh spinach
  • Salt, pepper, garlic powder

Prepare flat baking dish. Cut up enough bread to fill pan, about 4 cups. Whisk together eggs, milk, salt, pepper, garlic powder. Stir in bread cubes, fresh spinach, half of the cheese and any other ingredients that sound good such as sausage, ham, other veggies, chilies. Transfer to baking dish and top with remaining cheese. Bake in 375-400 degree oven about 30 minutes. Serve with hot sauce if desired.
