NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
So much has happened in May while this new blog website was being developed and I wasn’t posting for about a month. But perhaps the biggest highlight was our granddaughter’s gymnastics show… she was so excited, and so proud to show off her medal!
RECIPE OF THE WEEK
When I read a quote from Katharine Hepburn saying ‘never put too much flour in your brownies’ I was hooked… I had to try her recipe. These brownies are as straightforward and classic as she was… just the essentials with no fuss. Easy to make, the texture is soft and gooey with a dense chocolate-y flavor. As our son said, “These are really good!”
KATHARINE HEPBURN’S BROWNIES
from the New York Times
- 1/2 cup cocoa
- 1/2 cup butter (1 stick)
- 2 eggs
- 1 cup sugar
- 1/4 cup flour
- 1 cup chopped or broken-up walnuts or pecans
- 1 teaspoon vanilla
- Pinch of salt
Heat oven to 325 degrees F.
Melt butter in saucepan with cocoa and stir until smooth. Remove from heat and allow to cool for a few minutes, the transfer to a large bowl. Whisk in eggs, one at a time. Stir in vanilla.
In a separate bowl, combine sugar, flour, nuts and salt. Add to the cocoa-butter mixture. Stir until just combined.
Pour into a greased 8 x 8 inch square pan. Bake 30-35 minutes. Don’t overbake! The brownies should be soft and gooey! Let cool, then cut into bars.
