Wednesdays Unplugged – Fern’s Kirby Puckett Brownies

NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

This Memorial Day weekend was a time for gathering with family in North Dakota for the joint funeral of my cousin’s husband and daughter. Although their loss was sorrowful, it was also a time for sharing the joy of family… and seeing my Uncle Ardell who turns 96 in June. The cross on the church is in memory of my parents… the wooden cross commissioned by my mother when my father died, and the metal cross added to it by our son when my mother died.

RECIPE OF THE WEEK

From a post 10 years ago: When we recently came upon my mother’s old cookbooks (the ones that really got used!) we found “Buttermilk – Delicious Brownies – Fern”. Our daughter-in-law immediately asked if they were her famous ‘Kirby Puckett Brownies’ that she used to bring to him at the nearby KNOX radio studio when the Twins came to town ( she is a HUGE Twins fan!)… so I asked! She said yes, it sounded like they were the ones. Fern was my Uncle Ardell’s wife. It seems fitting that we again share her brownie recipe. After all, aren’t brownies always a good idea?!

Kirby Puckett Brownies

FERN’S BUTTERMILK – DELICIOUS BROWNIES (AKA Fern’s Kirby Puckett Brownies)

  • 1 stick margarine
  • 1 cup water
  • 1/4 cup cocoa
  • 1/2 cup Mazola oil
  • 1/2 cup buttermilk
  • 2 eggs, slightly beaten
  • 2 cups flour
  • 2 cups sugar
  • 1/2 teaspoon salt
  • 1 teaspoon soda
  • 10 x 15 jelly roll pan

Preheat oven to 350 degrees F.

Mix margarine, Mazola oil (I used butter for both), water and cocoa in a saucepan and bring to a boil. 

Mix together buttermilk, eggs, flour, sugar, salt and soda and add to above mixture. Mix about 2 minutes with mixer.

Pour into prepared pan and bake for 20-25 minutes.

FROSTING

  • 1 stick margarine (or butter)
  • 1/4 cup cocoa
  • 1/3 cup buttermilk

Bring to a boil and remove from heat. Mix in 3 1/2 cups powdered sugar and 1 teaspoon vanilla (can use mixer). Can frost brownies while still warm.
