NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

We celebrated our birthday buddy grandchildren last week… born on the same day 5 years apart. This year they turned 21 and 16! John did a flashback and put together a scavenger hunt for them to find their presents… they were lucky to avoid the rains!
RECIPE OF THE WEEK
I found this recipe for John’s favorite oyster wings a la Leeann Chin at recipeblossom.com… it got rave reviews.

OYSTER WINGS a la Leeann Chin
- 2 pounds chicken wings (drumettes and flats, wing tips removed)
- 1/4 cup soy sauce
- 1 tablespoon honey
- 1 tablespoon sesame oil
- 1 tablespoon fresh ginger, minced (or 1/4 teaspoon ground ginger)
- 2 cloves garlic, minced
- 1/4 teaspoon ground black pepper
Rinse the chicken wings and pat them dry thoroughly using paper towels. Lightly season with salt and pepper.
MARINADE: In a mixing bowl, combine soy sauce, oyster sauce, honey, sesame oil, minced garlic and ginger. Whisk until mixture is smooth and thoroughly blended.
Combine wings and marinade and mix until all the wings are coated with the marinade. Cover the bowl or transfer to a zip lock bag and let them marinate in the refrigerator for at least 2 hours or overnight.
When ready to bake, preheat oven to 400 degrees F. Line a baking sheet with parchment paper and arrange wings in a single layer, making sure they are spaced out so they bake evenly.
Bake for 30 minutes, then flip each piece using tongs and bake for another 15 minutes. The wings should be golden brown with slightly crispy edges when done.
