Wednesdays Unplugged – Old-Fashioned Corned Beef Hotdish

NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

This was an interesting week… our granddaughter Sina had an orchestra concert (Roseville has an outstanding orchestra program!)… we went to “A Midsummer Night’s Dream” at the Guthrie (they never cease to amaze me!)… and we had the biggest snowfall of the year (9.5″ at the airport!) that cancelled both school and family night this week!

RECIPE OF THE WEEK

This week’s recipe is a true old-fashioned one from the 1950s. I grew up with it made by my mother, then our children learned to love it when she made it… so of course I had to make it as well as a family favorite. Our kids preferred this hot dish to pizza when they were growing up! Our daughter asked for it for her nostalgic birthday dinner last week… and our granddaughter Kennedy also often asked for it on her birthday!

OLD-FASHIONED CORNED BEEF HOTDISH

  • 1/2 of 1 pound package of macaroni
  • 1 can corned beef
  • 1 can cream of chicken soup
  • 1/2 pound Velveeta cheese, cubed
  • 1 can whole kernel corn, drained
  • 1 cup milk
  • 2 tablespoons instant onion
  • crumbs on top (bread, ritz, corn flakes)

Cook macaroni according to package directions, drain. Combine with rest of ingredients, pour into greased casserole and bake for 1 hour at 350 degrees.
