NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
We spent a wonderful collection of moments together the day after Thanksgiving… making lefse… doing a Christmas puzzle in preparation for the holiday season… and our grandson and his girlfriend beating me at Chinese checkers! Oh, yes… we also ate a Thanksgiving feast and played our family favorite, pencil charades!
RECIPE OF THE WEEK
Most sugar cookies I have eaten are either delicate or soft and chewy, but my favorite cookies have always been more crunchy. I have never had a crunchy sugar cookie before and when I found this recipe at breadsandsweets.com I knew I had to try it. It did not disappoint… the cookies were rich, buttery, crunchy and delicious!
CRUNCHY SUGAR COOKIES
- 1 1/4 cup flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 cup butter, softened
- 3/4 cup granulated sugar
- 1 large egg yolk
- 1/2 teaspoon vanilla extract
Preheat oven to 375 degrees F.
In a medium bowl whisk together the flour, baking soda and baking powder and set it aside.
In a large bowl beat together the sugar and butter with an electric mixer until creamy, about 2-3 minutes. Add the egg yok and vanilla and mix again. Gradually blend in the flour mixture. The dough should be soft and compact, not sticky.
Roll the dough into walnut-sized balls and roll in a small bowl of sugar. Place balls on two cookie sheets 2 inches apart. (May line with parchment paper if desired.)
Bake until the edges are golden, about 8-10 minutes. Let cool a few minutes on baking sheet, then move to a wire rack to cool completely.
