NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
Our granddaughter was part of the award-winning women’s rugby team at Winona State University when she was in school. She loved it so much that she joined the Metropolis Valkyries when she got a job in the Twin Cities. It is an amazing D1 community team that competes with other teams across the country. Last weekend they played a team from Chicago… and won, 119-0!!! I also got to celebrate another granddaughter by going to an amazing 10th Wave concert with her… at the incredible Lakewood Cemetery Chapel, filled with designs created from more than 10 million individual mosaic pieces!!
RECIPE OF THE WEEK
I found this recipe for apple cookie bars in Food Network Magazine and knew it was the right season to try it… it got rave reviews. The original recipe called for Golden Delicious apples but I used First Kiss instead… I think you could use whatever variety you prefer.
APPLE COOKIE BARS
- 2 Golden Delicious apples (or your favorite variety)
- 2 1/2 sticks butter, divided
- 1 tablespoon plus 1 1/2 cups sugar
- 1 teaspoon apple pie spice
- 3 eggs
- 1 tablespoon vanilla
- 2 cups flour
- 1/4 teaspoon salt
Saute 2 diced, peeled apples in 4 tablespoon butter with 1 tablespoon sugar and 1 teaspoon apple pie spice until softened.
Melt 2 sticks butter; let cool slightly, then whisk in 1 1/2 cups sugar, 3 eggs and 1 tablespoon vanilla.
Stir in 2 cups flour and 1/4 teaspoon salt, then the apples.
Spread in an oiled, foil-lined 9×13 inch baking dish and sprinkle with coarse sugar. Bake at 350 degrees F until the edges are set, 25 minutes. Let cool and serve.
