NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
John asked for Glam Doll donuts for his birthday this year… and our son brought him an egg salad filled donut from So Yen for Father’s Day… donuts were in season this year!
RECIPE OF THE WEEK
Summer seems to require cool lemon desserts. This one is from Southern Living… an easy, no-bake frozen dessert.
LEMON FREEZE
CRUST
- 1 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 3 tablespoons granulated sugar
FILLING
- 1 1/2 cups heavy whipping cream
- 14 ounce can sweetened condensed milk
- 1/2 cup lemon curd
- 2 teaspoons lemon zest
- 2/3 cup lemon juice (from about 3 large lemons)
- Pinch salt
- 2 tablespoons graham cracker crumbs, for topping
Grease a 9 x 9 inch baking pan or dish with cooking spray.
Prepare crust: in a medium bowl, stir together graham cracker crumbs, melted butter and sugar until evenly combined. Press into an even layer in prepared pan. Place in freezer while preparing the filling.
Whip the cream in a large bowl until it reaches soft peaks.
In another large bowl, whisk together sweetened condensed milk, lemon curd, lemon zest, lemon juice and salt until smooth. Fold in whipped cream and spread into prepared pan. Sprinkle with graham cracker crumbs, cover with foil and freeze 8 hours or until firm.
Cut into squares to serve and top with strawberries or other fruit if desired.
