NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
We are now into summer birthday season. Our youngest granddaughter and oldest grandson were both born on the 22nd of July, 5 years apart. They get to choose the menu on their birthday week so Sina got this week and Khalen gets next week. It was also our first meal together inside since the pandemic shut-down in March 2020… time for celebration!
RECIPE OF THE WEEK
Without flinching, Sina picked Lemonade Icebox Pie for her birthday dessert. I haven’t posted the recipe since 2017 so I thought it was time I could share it again! It is from Taste of Home, served to us by Carolyn Hensrud when we visited them in Palm Springs.
LEMONADE ICEBOX PIE
- 8 ounces cream cheese, softened
- 14-ounce can sweetened condensed milk
- 3/4 cup thawed lemonade concentrate
- 8 ounce carton frozen whipped topping, thawed
- 9-inch graham cracker crust
In a large bowl, beat cream cheese and milk until smooth. Beat in lemonade concentrate. Fold in whipped topping and pour into crust. Cover and refrigerate until set.
