Wednesdays Unplugged – Mucky Duck Key Lime Pie

NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!

This week our birthday buddy grandkids turned 16 and 11! We haven’t been gathering for our Wednesday night dinners because of the pandemic but this week we celebrated by gathering on our patio…  grandkids did a photo scavenger hunt, we played bocce ball, munched on appetizers and had frozen key lime pie. After days of blistering heat it was a welcome change to have cool temperatures… it almost felt like fall!

RECIPE OF THE WEEK

Since our granddaughter requested frozen key lime pie for her birthday, it seems like a good recipe to share again. I got it years ago from friend Dori… which she got from the Mucky Duck restaurant in Captiva, Florida. I have tried many recipes for key lime desserts over the years but this is one of my favorites… quick and easy with only 3 ingredients! I like to let it sit out 10-15 minutes before serving to soften a bit.

MUCKY DUCK KEY LIME PIE

  • 1 can sweetened condensed milk
  • 1/3 cup key lime juice
  • 3 egg whites beaten to stiff peaks
  • Graham cracker pie crust

Fold key lime juice into milk, then fold in 3 beaten egg whites. Pour into graham cracker pie crust and freeze overnight.
