Wednesdays Unplugged – Crispy Lemon Torte

NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

This was the week when we settled down after the birthday duo. We saw the incredible Oppenheimer movie… I knew that my mother’s twin brother was one of the scientists at Los Alamos, but didn’t learn until afterwards that “he was said to have been the last to touch the bomb when it was installed.” It was a perfect week for relaxing, walking, reading, pondering… giving intuition time to breathe.

RECIPE OF THE WEEK

I seem to gravitate to lemon every year about this time. This is a recipe from a client a few years ago… light and delicious.

CRISPY LEMON TORTE

  • 6 extra large or 7 large eggs, separated
  • 1/2 teaspoon cream of tartar
  • 1 1/2 cups plus 1/2 cup sugar
  • 3 lemons
  • 1 pint cream
  • 1 cup powdered sugar

Beat until very stiff: 6-7 egg whites, 1/2 teaspoon cream of tartar and pinch of salt until stiff. Fold in 1 1/2 cups sugar. Bake in buttered 9 x 13 pan for 1 hour at 275 degrees F. Increase heat to 300 degrees and bake an additional 20 minutes.

Cook in double boiler until thick: 6-7 egg yolks, beaten until lemony. Add 1/2 cup sugar, 3 teaspoons lemon rind and 6 tablespoons lemon juice.

Whip 1 pint heavy whipping cream and sweeten with 1 cup of powdered sugar. Put 1/2 of whipped cream mixture on meringue, then custard and rest of cream.

Chill for 24 hours.
