Wednesdays Unplugged – Chaat Masala Mixed Nuts with Cornflakes

NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

Last Saturday was the opening of the juried art show “The Art of a Face” at the Rum River Art Center. Our granddaughter is standing in front of her accepted piece, wearing the same hat and jacket. Everyone was to submit a self portrait sketch along with their other submissions, shown in the group on the right… hers in the top row, fourth from the left. We were impressed with the great variety in both style and age of the artists… it’s worth a visit!

RECIPE OF THE WEEK

I was looking for a munching snack that wasn’t sweet and found this recipe at epicurious.com a couple months ago. I had trouble finding chaat masala spice locally so ordered it direct from India at www.planetspices.com. When it arrived of course I had to make it. It is spicy, but has great flavor… I find myself craving it.

CHAAT MASALA MIXED NUTS with corn flakes

  • 2 tablespoons chaat masala
  • 1 tablespoon cayenne pepper
  • 2 teaspoons sugar
  • 2 cups cornflakes
  • 1 cup raw almonds
  • 1 cup raw cashews
  • 1 cup raw pecans
  • 3 tablespoons vegetable oil

Whisk chaat masala, cayenne, and sugar in a small bowl to blend. Combine cornflakes, almonds, cashews and pecans in a medium bowl.

Heat oil in a large saucepan over medium heat. Add cornflake mixture and toss to coat. Cook, stirring often, until fragrant and beginning to turn golden brown, about 5-7 minutes.

Transfer cornflake mixture to a rimmed baking sheet and sprinkle half of chaat masal mixture over; toss to coat. Sprinkle remaining chaat masala mixture over and toss to coat again. Let cool, then transfer to a large bowl and serve.
