NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
To me there is nothing that illustrates miracles and wonder more than time spent laughing and sharing with dear friends in the natural beauty of the south shore of Lake Superior. While we were spending a wonderful weekend there we heard that another dear friend, Dori, passed away. Dori was very witty and made us laugh, but she was also very insightful and wrote beautiful poetry such as this one called “SSHH-SSHH“. She talked often about how she and Dick got married on the longest night of the year. This December 21st they would have been married 71 years! She will be missed by all who knew her.
RECIPE OF THE WEEK
The creator of this recipe, Ree Drummond, called it “otherwise known as a bowl of pure joy.” It was the perfect choice for putting together while we talked this week after everyone arrived for dinner… and a perfect choice for our picky granddaughter!
PASTA CARBONARA
- 12 ounces pasta, any variety
- 8 pieces thick cut bacon, diced small
- 1/2 whole medium onion, diced small
- 2 cloves garlic, minced
- 3 whole eggs
- 3/4 cup finely grated Parmesan
- 1/2 cup heavy cream
- Salt and plenty of black pepper
- 1/2 cup peas
Cook pasta according to package directions.
While the pasta is cooking, fry the bacon until just barely crisp. Remove from the pan and drain on paper towels. Pour off all of the bacon grease, but don’t clean the pan. Return the pan to the stove over medium-low heat and cook the onions and garlic until golden brown. Set aside.
In a bowl, mix together eggs, Parmesan, cream, salt and pepper until smooth.
When the pasta is done, reserve a cup or two of the pasta water. Drain the pasta and place it in a bowl. While the pasta is still really hot, slowly drizzle in the egg mixture, stirring the pasta the whole time. The sauce will become thick and should coat the pasta. Splash in a little hot pasta water if needed for consistency.
Halfway through, add the peas, bacon and sauteed onion/garlic. Finish adding the sauce, stirring until it’s all combined.
Serve immediately with extra Parmesan!
