NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
It was beautiful last weekend at the Renaissance Festival, a place where you ‘see’ with much more than your eyes. We hadn’t been there for about 10 years and it was fun going back… the grandkids even said they wanted to go back next year and dress up! It was fun seeing the Elizabethan Syngers that I used to sing with… one of the women who I sang with about 20 years ago is still singing with the group!
RECIPE OF THE WEEK
This is my mother’s birthday week and I looked for something I remember from her to make this week in her honor. I decided to make ‘Fruit Cocktail Cake’ that I remember her serving when she had groups of ladies over for meetings and served coffee and dessert afterwards. It wasn’t a hit last night, but I found myself craving it this morning so decided to share it. It really does need to be served with ice cream. Our daughter-in-law said it made her think of something that may have been created during rationing times when canned fruit cocktail was a treat. The recipe came from the cookbook of the women of Calvary Lutheran Church in Grand Forks, ND, circa 1963. It was submitted by four different women, one the wife of the pastor who baptized me!
VINTAGE FRUIT COCKTAIL CAKE
NOTE: I remember my mother using a full can of fruit cocktail, which is what I did. It didn’t bake up quite right, some sections fine and others not so fine… not sure if it was the oven or too much juice in the fruit cocktail due to changes in how it was processed or something else. It always turned out great when my mother made it!
- 1 cup flour
- 1 cup sugar
- 1 cup fruit cocktail, including juice
- 1 egg
- 1 teaspoon soda
- 1/4 teaspoon salt
- 1/4 teaspoon cloves
- 1/2 teaspoon cinnamon
Put all in bowl and beat 3 minutes. Put in greased pan and spread with 1/2 cup brown sugar and 1/2 cup nuts. Serve with whipped cream or ice cream.
