NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
When our family was on vacation this summer we visited the New Life Lavender & Cherry Farm in Baraboo, Wisconsin. There was something marvelous about it, which reflected their invitation to “join us for a time of relaxing, restoration and reconnecting”. Our grandson the photographer took some beautiful photos, and I bought some culinary lavender to bring home to my good friend Beata… who in turn baked some wonderful lavender cookies for us. When she gave me the fragrant box, she warned that they are an acquired taste. Most of my family agreed, but also pondered them and grew to like them more as I shared them again. Lavender is said to be the color of transformation… even transforming palates…
BEATA’S LAVENDER COOKIES
This is the recipe for the cookies Beata shared with us… but she also sent me a link to another recipe she thought would be worth a try… Lemon Lavender Cookies from Barley & Sage
- 1/2 cup butter (one stick), room temperature
- 1 cup sugar
- 1 egg
- 1 teaspoon baking powder
- 1 3/4Â – 2 cups flour
- 1 tablespoon milk
- 1/2 teaspoon vanilla
- 1/4 teaspoon salt
- 1 tablespoon lavender
Preheat oven to 375 degrees F. Cream butter and sugar until light and fluffy. Add egg and mix well. Add rest of ingredients and mix well; add lavender last. Form into a ball and chill overnight or at least 2 hours.
Roll out 1/4″ thick on lightly floured surface. Cut into desired shapes. (I make small hearts and stars.)
Bake 8 -10 minutes at 375 degrees F, checking at 4 minutes, and reverse pan.
Optional: before baking, brush with beaten egg white and sprinkle with colored sugar.
