Wednesdays Unplugged – Pull Apart Pizza

NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

We have been doing biennial family photo shoots since our youngest grandchild was born, and had our 7th shoot last weekend. We all had a good time discovering new photo possibilities as we gathered at MIA/Minneapolis Children’s Theater. We have had CTC season tickets for many years, but this gave a new opportunity to explore the grounds with a different focus… and explore downtown as we waited for our table for brunch afterwards. We’re all anxious to see the most recent photos, but I have photos from all previous shoots as my screensaver… and even the grandkids love looking at them!

RECIPE OF THE WEEK

I found this week’s recipe at pipandebby.com… thought it sounded like a good and easy appetizer. It was!

PULL APART PIZZA

  • 32.6 oz refrigerated biscuits
  • 8 oz pizza sauce
  • 2-4 cups shredded mozzarella cheese
  • 6 oz pepperoni slices
  • 1/2 cup marinara sauce for dipping

Preheat oven to 350 degrees F. Coat a bundt pan with cooking spray.

In four batches, stack 4 biscuits, each with sauce, pepperoni and cheese on top. Place stacks lying down in the ring, filling up the entire pan. Top with remaining cheese. (original recipe called for 2 cups cheese, we used a full 4 cups)

Bake in the preheated oven for 40-45 minutes, until the biscuits are baked through. Turn over onto a plate to serve. Pull apart and dip in marinara sauce.
