NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
Last weekend was a theater weekend… Mary Poppins Jr at Roseville High School and Diary of a Wimpy Kid at Minneapolis Children’s Theater. Mary Poppins was outstanding in that it was entirely student directed and produced… I loved how fresh and energetic it was. Our grandson was part of the lighting crew… he said we were at the best performance, so I guess we lucked out! Diary of a Wimpy Kid was amazing in the quality of both the production and cast performances… it was one of the best ‘big’ shows we have seen there!
RECIPE OF THE WEEK
Pork shoulder roast was on sale at Lunds and Byerlys last week and it was a busy week… need I say more? I used a recipe from Lunds and Byerlys… super easy with just a few ingredients and slow-roasted for tender, flavorful meat.
SLOW COOKER PULLED PORK SANDWICHES
- 2-3 pound pork shoulder roast
- 12 ounce can root beer
- 18 ounces of your favorite barbecue sauce (I used Stonewall Kitchen Honey Barbecue Sauce)
- 1 pint Lunds & Byerlys coleslaw
- 8 St. Pierre Brioche Burger Buns
Place pork in a slow cooker. Pour root beer over the meat. Cover and cook 6-7 hours on low until the pork shreds easily.
Drain well, stir in barbecue sauce. Serve on buns, topped with coleslaw.
