NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
We were in Palm Springs last week both for modernism week and to stay with John’s cousin married to my college roommate. The bonus was that we also got to see dear friends who are snow birds from our Minneapolis church… it was a wonderful week!
RECIPE OF THE WEEK
This week’s recipe is a longtime favorite of our host family, a recipe passed down from Carolyn’s mother. I even remember them from our college days!
SWEDISH PANCAKES
- 4 eggs
- 1 tablespoon sugar
- 1 heaping cup flour
- 2 cups milk
- 1/2 teaspoon salt (less)
Beat eggs, then add the rest of the ingredients. Heat a nonstick pan over medium high heat until water dances on the pan. Add a dash of butter before each pancake, then fill the bottom of the pan with a thin layer of batter. Carefully lift up edges to check for doneness. Flip, then cook on the other side. Roll up and serve topped with berries, maple syrup and sour cream.
