NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
I was surprised by the incredible beauty of the colors of the sunset earlier this week and had to run to get a photo of it. It’s amazing how fleeting it was… I took three photos one right after the other, and the colors faded in each successive one. Made me think about the time warp it feels like we have been in for the last couple years. Tom Papa explained it well… “Add two years to whatever you’re trying to recall. If you think you went to Disney three years ago, it’s really five.”
RECIPE OF THE WEEK
Our daughter-in-law asked for Sarah Kieffer’s book, “100 Cookies”, for Christmas. I didn’t realize until she brought a tin of sugar cookies she made from the recipes that what really intrigued her were Sarah’s pan-banging cookies! She made her cookies with almond extract instead of vanilla, and made them much smaller than Sarah’s gigantic cookies…still awesome. SARAH KEIFFER’S PAN-BANGING SUGAR COOKIES
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 1/2 teaspoon cream of tartar
- 1 cup 2 sticks unsalted butter, at room temperature
- 1 3/4 cup granulated sugar, divided
- 1 large egg
