NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
This past week was filled with nows. After more than a year of holding back because of Covid everything seemed to break out last weekend and we were busy gathering with people and attending events all weekend. But perhaps the highlight was gathering with family outdoors at John’s brother and sister-in-law’s new Twin Cities home… and of course the star of the day was their new granddaughter!
RECIPE OF THE WEEK
This is the first day of autumn, and I was reminded that peach season is almost over. A cousin served this delicate peach cobbler recently and I want to be sure I don’t lose the recipe. If you make it now, don’t delay… there aren’t many fresh peaches left…
OLD FASHIONED PEACH COBBLER
- 5 peaches, peeled, cored and sliced (about 4 cups)
- 3/4 cup white sugar
- 1/4 teaspoon salt
BATTER
- 6 tablespoons butter
- 1 cup flour
- 1 cup white sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup milk
- ground cinnamon
Add the sliced peaches, sugar and salt to a saucepan and stir to combine.
Cook on medium heat for just a few minutes, until the sugar is dissolved and helps to bring out juices from the peaches. Remove from heat and set aside.
Preheat oven to 350 degrees F. Slice butter into pieces and add to a 9 x 13 baking dish. Place the pan in the oven while it preheats to allow the butter to melt. Once melted, remove the pan from the oven.
In a large bowl mix together the flour, sugar, baking powder, and salt. Stir in the milk, just until combined. Pour the mixture into the pan, over the melted butter and smooth it into an even layer.
Spoon the peaches and juice over the batter. Sprinkle cinnamon generously over the top.
Bake at 350 degrees for about 38-40 minutes. Serve warm, with a scoop of ice cream if desired.
