NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
The turkeys came by again one morning this week and the Tom Turkey above was strutting his stuff! After showing houses in Woodbury over the weekend John and I went to Afton to explore, have lunch… and get some ice cream. It was good to spend some relaxing time together… the favorite part of our week.
RECIPE OF THE WEEK
John made these awesome baked pork chops from a recipe by yooper at food.com. He got two thick cut pork chops and they really were pretty awesome. He made his own breadcrumbs from stale bread and added Italian seasoning.
AWESOME BAKED PORK CHOPS
- 6 pork chops
- 1 teaspoon garlic powder
- 1 teaspoon seasoning salt
- 2 eggs, beaten
- 1/4 cup flour
- 2 cups Italian style breadcrumbs
- 4 tablespoons olive oil
- 1 can condensed cream of mushroom soup (10 3/4 ounces)
- 1/2 cup milk
- 1/3 cup white wine
Preheat oven to 350 degrees F.
Rinse pork chops, pat dry, and season with garlic powder and seasoning salt to taste.
Place the beaten eggs in a small bowl.
Dredge the pork chops lightly in flour, dip in the egg, and coat liberally with bread crumbs.
Heat the oil in a medium skillet over medium-high heat.
Fry the pork chops 5 minutes per side, or until the breading appears well browned.
Transfer the chops to a 9 x 13 baking dish, and cover with foil.
Bake in the preheated oven for 1 hour.
While baking, combine the cream of mushroom soup, milk and white wine in a medium bowl.
After the pork chops have baked for an hour, cover them with the soup mixture. Replace foil, and bake another 30 minutes.
