NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
John’s brother and his wife were here last weekend and you can see by the smiles on their faces that they were very pleased with the Twin Cities home that they decided to buy for when they move here after they retire!
RECIPE OF THE WEEK
I sought out this week’s recipe when I saw a couple bananas and a couple pears in our fruit bowl that were past their prime… perfect for using together in a banana pear bread! I found quite a few recipes online, decided on this one by Maria Swoffer at food.com. It was moist and delicious. I used two smaller loaf pans instead of one big one, baked for about 45 minutes (about half the time).
BANANA PEAR BREAD
- 2 bananas
- 2 pears, peeled, chopped
- 2 cups flour
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1/2 cup butter
- 1/4 cup vanilla yogurt
- 2 eggs
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/4 teaspoon nutmeg
Preheat oven to 350 degrees F.
Mash bananas and pear in a bowl.
In a separate bowl, mix the rest of the ingredients until creamed together.
Mix in the fruit mixture.
Pour the batter into a greased loaf pan.
Bake for an hour and a half.
Let cool for at least 10 minutes so it doesn’t fall apart, it solidifies with time.
