NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
What a week! In addition to the passing of Walter Mondale and the guilty verdict in the death of George Floyd, the wild turkeys have been out again… one even came up to our patio door the other day!
RECIPE OF THE WEEK
I loved the flavor of the sauce in this garlic chicken thigh recipe… quick, easy and flavorful… perfect for spooning over mixed rice. The trick to crispy skinless chicken thighs is cooking longer on a lower heat.
GARLIC CHICKEN THIGHS
- 5-6 skinless boneless chicken thighs
- 1 teaspoon garlic powder
- salt and pepper
- 1 tablespoon olive oil
- 1/2 cup dry white wine
- 2 tablespoons unsalted butter
- 2 large cloves garlic, minced
- finely chopped parsley, optional
Sprinkle both sides of chicken with garlic powder, salt and pepper.
Heat oil in a large skillet over medium heat. Place chicken in skillet smooth side down.
Press down lightly with spatula. Cook for 5 minutes, until deep golden and crispy.
Turn and press lightly with spatula. Cook for 2 minutes. Add garlic and butter, cook for 1 minute until garlic is light golden and it smells amazing.
Add wine, then turn up heat. Stir around the chicken to dissolve golden bits stuck on the skillet into the wine. Simmer rapidly for 1 1/2 minutes or until alcohol smell evaporates.
Remove from heat. Serve chicken with sauce.
