NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
This has been a full week… with our grandson KO catching a pass to score the first touchdown in last week’s Hopkins football game… and also experiencing the most unique wedding I have ever attended when my cousin Jeff’s family celebrated the wedding of Eden and Lilac… within a video game!! It was beautiful… and a perfect solution for family and friends to gather from around the world in the midst of a pandemic.
RECIPE OF THE WEEK
Of course this was the week of the election, and I thought something warm and gooey and chocolatey sounded perfect for an epic night that started weeks of post-election waiting. This simple recipe for hot fudge pudding cake won this week’s recipe contest!
HOT FUDGE PUDDING CAKE
CAKE
- 1 cup flour
- 1/2 cup white sugar
- 1/4 cup cocoa powder
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup milk
- 1/4 cup unsalted butter, melted
- 1 teaspoon pure vanilla extract
FUDGE SAUCE
- 1/2 cup white sugar
- 1/2 cup light brown sugar, packed
- 3 tablespoons cocoa powder
- 1 1/4 cups boiling water
Preheat oven to 350 degrees F. Lightly grease a 9″ baking pan. Boil water while preparing the cake.
Cake: combine 1/2 cup sugar, flour, cocoa powder, baking powder and salt. Add milk, melted butter and vanilla. Whisk until smooth and fairly lump free. Spread batter in prepared pan.
Sauce: combine 1/2 cup white and brown sugar and 3 tablespoons cocoa powder, sprinkle evenly over cake batter. Slowly pour the boiling water over the top. (Do not stir or mix, let water sit on the top.)
Bake 35 minutes or until the center is almost set. Remove from oven and let it cool for 15 minutes.
Serve while still warm with ice cream or whipped cream, and spoon fudge sauce from the bottom of the pan on top of each serving.
