NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
Our grandson had a glimmer of joy in these isolating times when he got his driver’s permit! He and his dad have been out driving… hopefully the snow holds off a little longer before it comes to stay.
RECIPE OF THE WEEK
This week’s recipe is an old comfort food standby. We haven’t had it for years, but it popped into my head when we had leftover rotisserie chicken. This is also a great way to use leftover Thanksgiving turkey. It is just a basic cream sauce with turkey added. I like it with peas, John does not… so I fix it without and then sprinkle frozen peas on mine for the freshest taste.
CREAMED CHICKEN OR TURKEY ON TOAST with peas
Make enough cream sauce for the amount of chicken or turkey you have. A rotisserie chicken works great. The recipe below is for a medium cream sauce, like thick cream. Add more flour if you want it thicker.
For each cup of sauce…
- 2 tablespoons butter
- 2 tablespoons flour
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 cup milk
Melt butter in saucepan over low heat. Blend in flour, salt and pepper. Cook over low heat, stirring until mixture is smooth and bubbly. Remove from heat, stir in milk. Then return to heat and heat to boiling, stirring constantly. Boil and stir one minute. Add meat and turn off heat, letting the boiling sauce heat the chicken. Add frozen peas as desired.
