Wednesdays Unplugged – Shipwreck Stew

NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

Last Saturday we went down to beautiful southeastern Minnesota to visit John’s cousin who is married to my college roommate… of course we were so happy to see each other for the first time this year that we forgot about pictures! But on Sunday we didn’t forget to take a picture on our patio of the August birthday trio that has been getting together for more than 20 years. A month late this year, but that didn’t matter. What is so fun is I also got to remember my mother, whose birthday was last weekend… she made the afghan in the photo above when she got engaged to my father. Today’s quote is from a verse she shared with me years ago… it included 10 different things for which to Take Time.

RECIPE OF THE WEEK

This week’s recipe came from our trip to Carolyn and Grant in southeastern Minnesota… I believe it came from Carolyn’s mother.

SHIPWRECK STEW

  • 1 pound raw hamburger, lean
  • Sliced potatoes, onion, carrots
  • Salt & pepper
  • 1 can tomato soup
  • 1 can pork and beans

Layer hamburger, potatoes, onion and carrots in casserole. Pour tomato soup and some pork and beans over the top, reserving some pork and beans.

Bake at 325 degrees for 2 1/2 hours. Cover the first hour, then pour on the rest of the pork and beans and uncover for about 1 1/2 hours until done.
