Wednesdays Unplugged – Crockpot Glazed Pork Tenderloin

NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

We had our first Children’s Theater performance of the new year, really more a music performance of Bob Marley’s music than a story line in “Three Little Birds”… like a warm Caribbean getaway. And our granddaughter had her winter school band and orchestra concert this week. Naturally she is about the shortest in the group and sits in the back row with both her trumpet and her viola!

RECIPE OF THE WEEK

This simple crockpot pork tenderloin also makes great shredded pork for sliders… think SuperBowl!

CROCKPOT GLAZED PORK TENDERLOIN

  • 2 pounds pork tenderloin
  • 1 teaspoon ground sage
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 clove garlic, crushed
  • 1/2 cup water
  • 1/2 cup brown sugar
  • 1 tablespoon cornstarch
  • 1/4 cup balsamic vinegar
  • 1/2 cup water
  • 2 tablespoon soy sauce

Mix together sage, salt, pepper and garlic. Rub over tenderloin. Place 1/2 cup water in the slow cooker. Add tenderloin.

Cook on low for 6-8 hours.

About an hour before the roast is finished, mix together in a small pan the brown sugar, cornstarch, balsamic vinegar, water and soy sauce for the glaze.

Heat medium and stir until mixture thickens, about 4 minutes

Brush roast with glaze 2-3 times during the last hour of cooking. Serve with remaining glaze on the side.

For a more caramelized crust, remove roast from crockpot and place on an aluminum lined sheet pan, glaze, and broil 1-2 minutes until bubbly and caramelized. Repeat 2-3 times until desired crust is obtained.
