NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
We had our annual church women’s retreat last weekend, at the same time as the biggest snow event of the year so far. It was a perfect time to look out over the beautiful setting… and watch an eagle soaring over the idyllic landscape along the St. Croix. In addition to spending time together I also had the opportunity to finish reading an amazing book, Searching for Nora by Wendy Swallow.
RECIPE OF THE WEEK
We had this delicious baked oatmeal for breakfast one morning at the retreat.
BAKED OATMEAL
- 3 cups rolled oats
- 1 cup brown sugar
- 2 teaspoons ground cinnamon
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 cup milk
- 2 eggs
- 1/2 cup melted butter
- 2 teaspoons vanilla extract
- 3/4 cup dried cranberries
Preheat oven to 350 degrees F.
In a large bowl, mix together oats, brown sugar, cinnamon, baking powder, and salt. Beat in milk, eggs, melted butter, and vanilla extract. Stir in dried cranberries. Spread into a 9 x 13 inch baking dish.
Bake in a preheated oven for 40 minutes.
