NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
Last weekend was a big one for both granddaughters! Our oldest was in South Carolina for the national women’s rugby championships… they won the fall collegiate championship!!! Our youngest granddaughter had her concert with the Twin Cities Girls Choir… she had a solo!!! We are so proud of them both!
RECIPE OF THE WEEK
As an adult I like sweet potatoes, but not when I was growing up, with the old-fashioned holiday recipes that are so sweet they taste more like dessert. This recipe struck the perfect balance for me… with tart cranberries cooked in sweet maple syrup over plain cooked sweet potatoes… yummmm!
CRANBERRY MAPLE SWEET POTATOES
- 4 pounds sweet potatoes
- Salt
- 1 cup pure maple syrup
- 1 1/2 cup cranberries
- 3 tablespoons butter
In covered 6-quart saucepot, heat whole sweet potatoes with 1 teaspoon salt and enough water to cover to boiling on high. Reduce heat to low and simmer, covered, about 30 minutes or just until potatoes are fork-tender. Drain. Set aside until cool enough to handle.
Meanwhile, in 1-quart saucepan, heat maple syrup to boiling on high. Reduce heat to medium, and boil gently 10-15 minutes or until reduced to 1/2 cup. Stir in cranberries, butter, and 1/2 teaspoon salt, and cook just until cranberries pop, about 5 minutes longer.
Preheat oven to 400 degrees. Cut cooled sweet potatoes crosswise into 1-in-thick slices and arrange in shallow ceramic or glass baking dish. Spoon cranberry syrup mixture over potatoes. Bake, uncovered, 20 minutes or until heated through.
