NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
This was a big week for our grandson… basketball tryouts! He has been playing basketball for years, it is fun to see him advancing to the highly competitive high school teams… this year the 10th grade team.
RECIPE OF THE WEEK
Is it really Thanksgiving again next week? When I was growing up Thanksgiving was always at our house, and I got to thinking about my mother’s salad with ground cranberries. This recipe from Taste of Home is very similar, with the addition of a chopped apple. I also included my mother’s 50+ year old recipe for comparison.
CREAMY CRANBERRY SALAD
- 3 cups fresh or thawed frozen cranberries, chopped
- 1 can (20 ounces) unsweetened crushed pineapple, drained
- 2 cups miniature marshmallows
- 1 medium apple, chopped
- 2/3 cup sugar
- 1/8 teaspoon salt
- 2 cups heavy whipping cream
- 1/4 cup walnuts
ALPHIE’S CRANBERRY SALAD
- 1 pound cranberries, ground
- 2 cups sugar
- 20 ounce can crushed pineapple, drained
- 1 bag miniature marshmallows
- 1 cup chopped pecans or walnuts
- 1 pint whipping cream, whipped with 2 tablespoons sugar and 1 teaspoon pure vanilla
Grind cranberries, add sugar and chill for several hours. Add pineapple, marshmallows and whipped cream. Chill in a bowl.
