NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
This has been theater week… first a rousing Cinderella at CTC with the family, then a girls night out with the women from our longtime Marriage Care group at Steel Magnolias at the Guthrie.
RECIPE OF THE WEEK
I’m not sure how long ago or from where I printed this meatloaf recipe with stuffing in it, but it seemed like a snowy day in November was a good time to try it. Be careful not to overcook it as I did!
STUFFING MEATLOAF
- 1 package Stove Top Stuffing mix, dry
- 1 cup warm water
- 1 1/2 pounds ground beef
- 2 eggs, slightly beaten
- 1 package onion soup mix
Preheat oven to 350 degrees F. Coat inside of bundt pan with cooking spray.
Place warm water, onion soup mix and dry stuffing mix in a bowl. Mix well. Let sit for a few minutes to allow bread time to absorb water. Add eggs and ground beef. Mix well.
Place evenly in bundt pan and bake about an hour, until no longer pink inside.
Remove and let it rest 5 minutes, then fill with mashed potatoes and drizzle with gravy.
