Wednesdsays Unplugged – Baked Country Style Ribs with homemade BBQ sauce

NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

We have been delighted by two Children’s Theatre Company productions in close succession… one an amazing circus a la ‘Cirque du Soleil’ from Ethiopia on their main stage … and the other an impressive telling of the story of ‘Snow White’ on their more intimate stage (loved the thrust stage and creative set). What was amazing about this one was that only 2 actors told the whole story and played all the characters, including all 7 dwarves!

RECIPE OF THE WEEK

With cooler weather, I had a craving for oven-baked country style ribs. Most commercial barbeque sauce doesn’t agree with me, so I was on the lookout for a good sauce… I think I found it! I combined two recipes to make these delicious ribs.

Baked Country Style Ribs with homemade BBQ sauce

  • 6 pounds pork spareribs
  • 1 1/2 cups ketchup (I used Heinz Simply Ketchup)
  • 3/4 cup packed brown sugar
  • 1/2 cup white vinegar
  • 1/2 cup honey
  • 1/3 cup soy sauce
  • 1 1/2 teaspoons ground ginger
  • 1 teaspoon salt
  • 3/4 teaspoon ground mustard
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • Salt and pepper to taste

Preheat oven to 300 degrees F. Salt and pepper both sides of ribs and place in a single layer on a low rack in roasting pan. Cover the pan tightly with foil and bake for 2 hours.

Meanwhile, mix together ingredients above for BBQ sauce.

Carefully (steam and liquid in the pan will be hot!) remove ribs from the oven and check the meat. The ribs should be starting to become tender. If they still feel tough, re-cover and place back in the oven for 15-30 minutes.

Transfer ribs to a plate and drain liquid from the pan. Remove rack and return ribs to the pan. Pour BBQ sauce over the ribs, brushing as needed to make sure they are all generously coated.

Reduce oven to 275 degrees F and bake ribs, uncovered for about an hour more, until you can pull the meat apart with a fork. Remove from the oven and let rest for about 5 minutes and serve.
