NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
Last weekend was a special one… the annual Docomomo tour of mid-century modern houses… made more special by dear friends who came to spend the weekend with us and the three birthday buddies getting together. Fall colors are emerging…
RECIPE OF THE WEEK
It is apple season time, and these bars are yummy… even John who doesn’t like nuts liked them!
SOUR CREAM APPLE BARS with pecans
- 2 cups flour
- 2 cups brown sugar, firmly packed
- 1/2 cup butter
- 1 cup chopped pecans or walnuts
- 1/2 teaspoon cinnamon
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup sour cream
- 1 teaspoon vanilla
- 1 egg, lightly beaten
- 2 cups finely chopped apples
In a large bowl, mix flour, brown sugar and butter with a pastry blender or on low speed with a mixer until crumbly. Stir in nuts. Press 2 3/4 cups of this mixture into a 9 x 13-inch pan lined with parchment paper.
To remaining mixture, add cinnamon, baking soda, sour cream, vanilla and egg. Blend well. Stir in apples. Spread evenly over base. Bake at 350 degrees F for 35 to 40 minutes, or until a toothpick inserted in the center comes out clean.
