Wednesdays Unplugged – KO’s Passion… Puppy Chow!

NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

Our family took a behind the scenes tour of the Guthrie Theater last weekend. It is an amazing work of art, a living building that Jean Nouvel created… even more astonishing because it was the first theater he designed. The photo above was taken in the amber box, one of my favorite spaces.

RECIPE OF THE WEEK

We have been celebrating birthdays lately, and our grandson asked for his passion… puppy chow! I never made it before he asked for it, so I am recording it here so I have the recipe handy for next time!

KO’s Passion… PUPPY CHOW

  • 1 cup semisweet chocolate chips
  • 1/2 cup creamy peanut butter
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 6 cups Rice Chex or Crispix cereal
  • 1 1/2 to 2 cups powdered sugar

Place the chocolate chips, peanut butter, and butter in a medium microwave safe bowl. Microwave on high for 1 minute. Remove the bowl from the microwave and stir. Put the bowl back in the microwave and heat for an additional 30 seconds or until mixture is smooth when stirred. Add the vanilla extract and stir again.

Pour the cereal into a large mixing bowl. Add the peanut butter mixture and gently stir until cereal is evenly coated. Pour the coated cereal into a large ziplock bag. Add the powdered sugar, seal the bag and shake until the cereal is well coated. Spread on parchment or waxed paper and let sit until cool and chocolate is set.
