“Why has the burning of Notre Dame moved so many? Because we believe in beauty, majesty, faith, art, history, and the human expressions thereof. We recognize in this cathedral our common humanity.” ~ Dan Rather
NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
We spent an impromptu evening at the Ice House with dear friends on Friday evening… fabulous food, great jazz, and wonderful company! I went to a screening of a fascinating documentary, The Experimental City, sponsored by Docomomo last evening… I can’t believe I had never heard of this intriguing concept that came close to becoming reality in Minnesota. What I also find hard to believe is the fire at Notre Dame this week… it feels surreal.
RECIPE OF THE WEEK
It’s Easter this Sunday and my thoughts turn to desserts strawberry and lemon. I am thinking I may make this one from a recipe I received from a client… very light, crisp and lemony. Thank you, Bernice!
CRISPY LEMON TORTE
- 6 extra large or 7 large eggs, separated
- 1/2 teaspoon cream of tartar
- 1 1/2 cups plus 1/2 cup sugar
- 3 lemons
- 1 pint cream
- 1 cup powdered sugar
Beat until very stiff: 6-7 egg whites, 1/2 teaspoon cream of tartar and pinch of salt until stiff. Fold in 1 1/2 cups sugar. Bake in buttered 9 x 13 pan for 1 hour at 275 degrees F. Increase heat to 300 degrees and bake an additional 20 minutes.
Cook in double boiler until thick: 6-7 egg yolks, beaten until lemony. Add 1/2 cup sugar, 3 teaspoons lemon rind and 6 tablespoons lemon juice.
Whip 1 pint heavy whipping cream and sweeten with 1 cup of powdered sugar. Put 1/2 of whipped cream mixture on meringue, then custard and rest of cream.
Chill for 24 hours.
