NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
Last week we were in the deep freeze, this week is ice-land! This picture isn’t of me falling, but fall I did on the ice Monday afternoon! I stepped onto the landing outside our front door to go and meet with a client and slipped immediately on glare ice… twisting and falling on the ice down our front steps and landing on the sidewalk. I didn’t break anything, but I crawled back inside with one side of my back badly bruised. My pain is better as long as I don’t bend and twist, but it’s a big ‘ouch’ when I move… demonstrating how much work our core muscles do! I am not alone… hospitals have been busy, and I personally have heard of about 15 people who have fallen… ready for the ice to go away!
RECIPE OF THE WEEK
I made these blondies from food network’s Ree Drummond a few weeks ago and yummy they were!
YUMMY BLONDIES
- 1 1/2 sticks+ (12 tablespoons) unsalted butter, melted and cooled, plus more for the pan
- 1 1/2 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 1 1/2 cups dark brown sugar, packed
- Â 1 tablespoon vanilla extract
- 2 large eggs, lightly beaten
- 1/2 cup toasted walnuts, coarsely chopped
- 1 cup plus 2 tablespoons chocolate chips
- Flaky sea salt to garnish
Preheat oven to 350 degrees F. Butter a 9 x 13-inch pan, line with parchment leaving an overhang, butter the parchment.
Whisk the flour, baking powder and salt together in a medium bowl and set aside. In another bowl, whisk the melted butter and brown sugar together until combined. Add the vanilla and eggs and stir to combine. Fold the flour mixture into the wet ingredients, being careful not to over-mix. Fold in the walnuts and and 1 cup of the chocolate chips. Pour the batter into the prepared pan and smooth the top. Scatter the remaining 2 tablespoons chocolate chips over the batter.
Bake until the top is a light golden brown, 20-25 minutes, being careful not to over-bake. Let cool on a wire rack. Remove blondies from the pan and transfer to a cutting board. Cut into rectangles, sprinkle with flaky sea salt and serve.
