Wednesdays Unplugged – Peanut Butter Bites

NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

We went to Mr. Popper’s Penguins at the Minneapolis Children’s Theatre last week… this production presented by Pins & Needles Productions from Bristol, England. It did not disappoint! I love the way the puppeteers are not hidden but are  not distracting, in much the same way as The Lorax. My favorites were the baby chicks… a delightful show!

RECIPE OF THE WEEK

This week’s recipe is for very simple peanut butter bites, similar to Reese’s peanut butter cups. They are very rich… the key is to cut them into very small bite-size cubes, the size to just pop in your mouth.

PEANUT BUTTER BITES

  • 1 1/2 cups brown sugar
  • 1 3/4 cups powdered sugar
  • 10 tablespoon butter, divided
  • 1 1/2 cups peanut butter
  • 1 cup semi-sweet or milk chocolate chips

Spray an 8-inch or 9-inch square pan with non-stick cooking spray.

In a large bowl, cream 5 tablespoons butter, brown sugar, and powdered sugar until smooth. Stir in peanut butter. Mix well and press into prepared pan.

In a small, microwave safe bowl, heat chocolate chips and remaining 5 tablespoons butter for 1 minute. Stir carefully and continue to microwave in 30-second increments until smooth, stirring after each increment. Pout over peanut butter crust and spread evenly.

Chill until completely firm, at least 2-3 hours or overnight. Let stand 10 minutes at room temperature before serving. Store leftovers in the refrigerator.
