Wedesdays Unplugged – Homemade Sloppy Joe Sliders

NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. No family night tonight… figured that if it is so cold even grocery stores are closed, no one should stick noses outside today!  Today is the third day in a row that schools have been closed due to record-breaking cold. Our wind chills are even colder than the South Pole… perfect snuggle weather!

RECIPE OF THE WEEK

We rarely have sloppy joes, but our daughter requested them for dinner a few weeks ago and this recipe from Chunky Chef was great! To suit her tastes I left out the green pepper and used instant onion instead of fresh onion… they were still delicious served on brioche slider buns. These would be great for a Super Bowl party!

HOMEMADE SLOPPY JOE SLIDERS

  • 1 tablespoon butter
  • 1 teaspoon olive oil
  • 1 pound ground beef
  • 1/3 green bell pepper, minced
  • 1/2 large yellow onion, minced
  • 3 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 2/3 cup ketchup
  • 1/3 cup water
  • 1 tablespoon brown sugar
  • 1 teaspoon yellow mustard
  • 3/4 teaspoon chili powder
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon black pepper
  • Dash of hot sauce

Heat butter and oil in large skillet. Add beef and brown, breaking apart into crumbles as it cooks, about 5 minutes. Drain and set aside.

Add onion and bell pepper to same skillet and cook 2-3 minutes, until soft. Add garlic and cook 30 seconds or so, until fragrant. Add beef back to the skillet and add tomato paste. Stir well.

Add ketchup, water, brown sugar, mustard, chili powder, Worcestershire sauce, salt, red pepper flakes and black pepper. Stir well to combine.

Cook over medium heat for 10-15 minutes, until mixture has thickened to your liking. Remove from heat and serve of toasted buns.
