NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
We went to the first show of the season at Minneapolis Children’s Theatre Company last week… it was fabulous! John had cataract surgery that day so didn’t go to the show. In the past, when we had an extra ticket our grandson would bring his neighbor and good friend. This time that didn’t work because he was part of the small 7-member cast… the boy in the green jacket!
RECIPE OF THE WEEK
Fall is apple crisp season for me and I was ready to try a new version. This one with graham cracker topping was delicious.
GRAHAM CRACKER APPLE CRISP
- 2 pounds Fuji apples, peeled and cut into 1/2-inch slices
- 1 tablespoon granulated sugar
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Cooking spray
- 1/2 cup packed brown sugar
- 1/4 cup quick-cooking oats
- 2 tablespoons flour
- 5 graham cracker sheets, broken into fourths
- 6 tablespoons butter, melted
Preheat oven to 400 degrees F. Combine first five ingredients in a large bowl, tossing to coat. Spoon mixture into an 11 x 7 inch glass backing dish coated with cooking spray.
Place brown sugar and next four ingredients in a food processor and pulse until crackers are coarsely chopped. Add melted butter and pulse until combined.
Spoon brown sugar mixture over apples. Bake at 400 degrees for 25-30 minutes or until topping is browned and crisp and apples are tender. Top each serving with ice cream or whipped topping.
