NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
We did a lot of theater last week… “The Lorax” at Children’s Theater and “Guess Who’s Coming to Dinner” at the Guthrie… both amazing productions and both more timely than ever! It never ceases to amaze me how these two theatres build productions from the ground up… including costumes, sets, staging, often creating world premieres… we are so blessed to have them right here! The puppetry for the Lorax character was incredible… 1 puppeteer did the feet, one did 1 hand and body, another the other hand, head and voice. They worked together so seamlessly it was easy to forget they were even there!
RECIPE OF THE WEEK
Days disrupted by snow storms trigger baking for me, and I made these blueberry lemon muffins with what I had on hand when the storm hit. I love the hint of lemon combined with the blueberry flavor.
BLUEBERRY LEMON BUTTERMILK MUFFINS
MUFFINS
- 2 1/2 cups flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 3/4 cup sugar
- 1/4 teaspoon salt
- 2 eggs, beaten
- 1 teaspoon vanilla
- 1 cup buttermilk
- grated zest of 1 lemon
- 1/2 cup butter
- 1 1/2 to 2 cups blueberries
TOPPING
- 6 tablespoons flour
- 2 tablespoons light brown sugar
- 2 tablespoons plus 2 teaspoons sugar
- 4 tablespoons butter
- 1/8 teaspoon salt
- 1 teaspoon cinnamon
GLAZE
- 3 tablespoons lemon juice (juice of 1 lemon)
- 1 cup powdered sugar
Preheat oven to 400 degrees F. Prepare muffin tin with liners or butter the muffin cups.
Place topping ingredients in a medium bowl, cutting butter into small chunks. Mix together with a pastry blender until crumbly. Set aside.
Mix muffins by whisking together dry ingredients in a large bowl. In another bowl, whisk eggs, buttermilk, vanilla lemon zest and melted butter that has been browned slightly if desired. Make a well in dry ingredients and pour in liquid ingredients, mixing quickly. Fold in blueberries. Spoon batter into greased or lined muffin tins and bake until golden brown, about 20-30 minutes at 400 degrees F.
When muffins come out of the oven mix glaze and pour over muffins. Allow time to cool… and serve.
