Wednesdays Unplugged – Wedding Chicken

NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

Our grandson brought over a couple unicorns he won at the fair for his birthday-buddy cousin last week… then she and Papa John had fun with them! When I saw the ‘snow hat’ on a statue on our grounds it made me think of John’s ‘unicorn hat’. We had nearly a foot of new snow over the weekend, and our grandson also played his last regular season game of traveling basketball… nice they won a trophy. With all the fresh snow and the 90th Academy Awards this Sunday, the Roger Ebert snow quote seemed appropriate this week.

RECIPE OF THE WEEK

When I read the story behind this week’s recipe at bon appetit, I knew I had to try it. When Naomi Pomeroy was getting married she couldn’t think of a caterer to use. She is a chef herself and decided to cook for her guests herself with this super-simple chicken. No surprise, it is delicious!

WEDDING CHICKEN

  • 10 garlic cloves, coarsely chopped
  • 4 serrano chiles, with seeds, thinly sliced
  • 3 1/2 inchpiece of ginger, peeled and finely grated
  • 1 cup olive oil
  • 1/2 cup reduced-sodium soy sauce
  • 1/4 cup apple cider vinegar
  • 3 tablespoons fish oil (such as nam pla or nuoc nam)
  • 1 tablespoon kosher salt
  • 2 lemons, sliced, plus wedges for serving
  • 6 sprigs thyme
  • 8 skin-on, bone-in chicken thighs (about 3 1/2 pounds)

MARINADEmarinate chicken at least 12 hours, can do the day before, keep chilled

Whisk garlic, chiles, ginger, oil, soy sauce, vinegar, sugar, fish sauce, and salt in a medium bowl until sugar and salt dissolve. Add lemon slices and thyme. Place marinade and chicken in a large resealable plastic bag. Turn to coat, and chill at least 12 hours.

BAKE CHICKEN

Heat oven to 450 degrees F. Remove chicken from amrinade, shaking off excess, and place on a rimmed baking sheet skin side up. Roast until cooked through and an instant-read thermometer inserted int he thickest part of the thigh registers 165 degrees F, 25-30 minutes. Serve chicken with lemon wedges for squeezing over.
