NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
It has been feeling like the lazy days of summer with a crispness in the air like fall. Grandkids were at Sing Minnesota camp last week. I was in awe when I heard them singing on stage… what a beautiful sound! Last weekend was the grand opening celebration of the $310M renovation of the State Capitol… simply awe-inspiring.
RECIPE OF THE WEEK
I seem to be on a lemon kick. We celebrated my birthday this week, and this recipe from client Bernice is what I had for my ‘birthday cake’. It was so light yet crunchy with a meringue crust, pieces just disappeared and I was told it has become a new favorite!
BERNICE’S LEMON TORTE
- 6 extra large or 7 large eggs, separated
- 1/2 teaspoon cream of tartar
- 1 1/2 cups plus 1/2 cup sugar
- 3 lemons
- 1 pint cream
Beat until very stiff: 6-7 egg whites, 1/2 teaspoon cream of tartar and pinch of salt until stiff. Fold in 1 1/2 cups sugar. Bake in buttered 9 x 13 pan for 1 hour at 275 degrees F. Increase heat to 300 degrees and bake an additional 20 minutes.
Cook in double boiler until thick: 6-7 egg yolks, beaten until lemony. Add 1/2 cup sugar, 3 teaspoons lemon rind and 6 tablespoons lemon juice.
Whip 1 pint heavy whipping cream and sweeten with 1 cup of powdered sugar. Put 1/2 of whipped cream mixture on meringue, then custard and rest of cream.
Chill for 24 hours.
