NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
Two of our grandchildren share the same birthday, which we celebrated tonight at family night… one turned 8 and the other 13… hard to believe! Â More cousins shared time together last weekend at a reunion in North Dakota with my husband’s family. They have more than 45 cousins!!
RECIPE OF THE WEEK
I was hungry for Carole’s lemon bars, so made my cousin’s recipe in addition to the giant chocolate chip cookie that our grandson requested for his birthday. They magically disappeared over the course of the evening. Our oldest granddaughter said she doesn’t usually like lemon bars, but loved these!
CAROLE’S LEMON BARS
CRUST
- 1 1/2 cups flour
- 3/4 cup butter
- 1/4 cup plus 2 tablespoons powdered sugar
Mix together and pat into buttered 9 x 13 pan. Bake at 350 degrees F for 20 minutes
FILLING
- 3 beaten eggs
- 1 1/2 cups sugar
- 4 tablespoons fresh squeezed lemon juice
- Grated rind of 2 lemons
- 3 tablespoons flour
- 3/4 teaspoon baking powder
Mix, pour over crust and bake at 350 degrees F for 25 minutes.
FROSTING
- 2 1/4 cups powdered sugar
- 3 tablespoons melted butter
- 4 tablespoons fresh squeezed lemon juice
- 1 1/2 teaspoons vanilla
Whisk together and spread on top.
