Wednesdays Unplugged – Mom’s Brownies

NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

John has been taking pottery classes and everyone got to pick one of his new creations to take home tonight. You can tell by their faces that everyone was very pleased with their new treasures… thank you, Papa!

RECIPE OF THE WEEK

I had a craving for my mother’s brownies this week… not sure why, I haven’t made them for a long time. Maybe it was thinking about summertime work on the farm. I remember my mother baking these brownies every week… and remember my dad coming in to get them by the handful to share with workers and neighbors. It has been a long time since I have eaten them and they were mighty tasty… may have to start making these again!  I also love looking at the page where the recipe is in my Calvary Lutheran Church Cookbook from Grand Forks, North Dakota. It’s about 50 years old, and you can see how much this page has been used!

MOM’S BROWNIES

  • 2 cups sugar
  • 1/4 cup cocoa
  • 1 cup melted butter
  • 4 eggs
  • 2 teaspoons vanilla
  • 1 1/2 cups flour
  • 1 teaspoons salt
  • 1/2 cup nuts

Mix sugar and cocoa together; stir in butter; add eggs and vanilla and beat well. Sift flour and salt together. Stir into cocoa mixture. Fold in nuts. Pour into greased 15 x 10 x 1 jelly roll pan. Bake Cool and frost.

FROSTING

  • 1 cup sugar
  • 1/3 cup milk
  • 1/4 cup butter
  • 1 teaspoon vanilla
  • Dash of salt
  • 1-ounce square unsweetened chocolate or 2 tablespoons cocoa

Combine sugar, milk, butter, salt and chocolate. Bring to a boil stirring constantly. Boil one minute. Cool in pan of ice water about 5 minutes. Beat until of spreading consistency. Frost brownies.
